Have you considered getting a book about Moodle in order to learn more?
You will find lots of help in the Moodle docs, and many suggestion here on moodle.org by great people, such as Howard and Ken, and many more.
1) I like to suggest that one starts by creating course categories before creating course.
2) After you create a test course, start adding resources to see how they behave.
3) Explore Admin settings. I always like to remove the "guest" login for security reasons, but this is a personal choice.
4) Add some test (dummy) students.
5) Test your email (CRON).
6) Start thinking about "backup".
7) Have fun.
I am sure that I missed at least 30 more points, but the 7 above are a good start.
