Paths weren't necessarily meant to be 100% accurate but suggestions as to where they are typically found. ovh may not do things in a 'typical' fashion or simply doesn't have it available for some packages.

The first one might be a typo ... shouldn't that be 'latex' instead of 'atex'?

Do you have command line access to your ovh hosting server?

If so, one could use: whereis latex to get the path.  /usr/bin/ normally contains 'execs' (executable scripts) available to all on the system.  One could also use: which latex or which convert to show 'which' exec/script would be used if someone were to enter a command using latex/convert, etc..

Check with provider.
