Yes, I totally agree with Ken here.
I've installed and upgraded many Moodle sites, a large percentage of these on Ubuntu / Debian. The apt-get install of Moodle will generally be a much older version than the current stable version.
AND .. I would much rather know exactly where it is installed - and this is very easy to do manually.
In fact, in the overall time spent installing and configuring a new Moodle site, the actual installation of Moodle itself (manual or apt-get) is maybe 1%-2% of the time you will spend - so apt-get install does not deliver much of a time saving - especially if the first thing you want to do is update Moodle
