Depending on who you are using for the hosting the email settings are easily configured within Moodle and "just works" right out of the box.
Have you moved that step forward and installed Moodle on your website as yet? Just give it a go, if you set it up as www.theAIOE.org/moodle, for example, you're unlikely to make any mistakes that cannot be just deleted.
Alternatively you could look for a Moodle Partner local to you or advertise on www.PeoplePerHour.com or www.elance.com for someone to set it up for you if you're feeling too far out of your depth.
