Why?
Database tables don't take up much space and don't (directly) impact on the performance of the site.
However, if you want to strip down your site, you can go to Site administration > Plugins and delete the plugins (even core ones) you don't want. Don't forget to follow the displayed instructions to remove the associated code too.
